I put this recipe in the crockpot before church. We invited some dear friends for lunch and all enjoyed a hearty, hot, and healthy lunch together. Satisfying!

The original recipe (I found it in the Reader’s Digest) doesn’t call for chicken. But that is what is pretty cool about this recipe. Add chicken or don’t. Don’t love black beans? Try a different bean. It’s versatile! Also a benefit: all those beans! Low in fat but high in fiber.

Spicy Beans with Turkey Sausage and Chicken

1 lb. smoked turkey sausage, halved and sliced

2 chicken breasts, cut into bite-sized pieces

1 can each (rinsed and drained): great northern beans, kidney beans, black beans

1 1/2 c. frozen corn

1 1/2 c. salsa

1 green pepper, diced

1 onion, diced

1 c. water

3 garlic cloves, minced

1 tsp. cumin

In a 5 quart slow cooker, combine all ingredients. Cover and cook on low 5-6 hours. Stir before serving. Could be served over rice.
